How To Make Red Wine Pot Roast?

  • Prepare your vegetables: Preheat oven to 350. Chop your carrots, finely mince garlic cloves and slice your white onion. Set aside.

  • Preparing Chuck Roast: Season chuck roast with garlic & herb and all purpose seasoning. Drizzle oil and rub into chuck roast. Drizzle in oil in dutch oven, sear chuck roast on both sides for 3-5 minutes until browned on both sides. Set aside on a sheet tray.
Red Wine Chuck Roast
  • Preparing Braising Liquid: Add in butter, once melted add in prepared vegetables. Allow to saute and soften. De-glaze with red wine and beef broth. Mix thoroughly, ensuring to scrape bottom of pot to release fond.
  • Braising Chuck Roast: Add chuck roast to a roaster (or can use same dutch oven), add over your broth and vegetables. Add aromatics (thyme, rosemary and sage) and cover. Bake for 3 hours at 350.
  • Preparing Red Wine Gravy: Remove 3/4 Cups of braising liquid, add to a small sauce pan on medium heat. Add flour and mix until gravy thickens.

Storing Red Wine Pot Roast

  • Refrigerate: Allow the pot roast to cool before refrigerating. Store the pot roast in an airtight container. Glass or plastic containers with lids work as well. Store in the refrigerator for up to 3-4 days.
  • Freezing: Divide the pot roast into meal-sized portions. Making it easier to thaw. Wrap each portion in plastic wrap or aluminum foil. Place in freezer bags. Store in freezer up to 3 months.

Defrost and Reheating Pot Roast

  • Defrosting: You can thaw pot roast by placing in fridge overnight.
  • Reheating: Add to a oven safe dish, bake at 325 until desired temperature is reached. Add beef broth to prevent pot roast from drying out.

Ingredients
  

  • 2 Lbs Chuck Roast
  • .5 White Onion Sliced
  • 5 Garlic Cloves minced
  • 2.5 Tbsp Garlic & Herb Seasoning
  • All Purpose Seasoning to taste
  • 3 Whole Carrots chopped
  • 4 Cups Beef Broth
  • 2 Sprigs Thyme
  • 2 Sprigs Rosemary
  • 2 Sprigs Sage
  • 4 Tbsp Salted Butter
  • 2 Tbsp Flour

Instructions
 

  • Preheat Oven to 350
  • Prepare your vegetables, chop your carrots, finely mince garlic cloves and slice your white onion. Set aside.
  • Season both sides of your chuck roast with garlic & herb seasoning & all purpose seasoning and drizzle with olive oil. Rub in your seasonings.
  • In a dutch oven on medium heat, drizzle in olive oil. Once hot, add in your chuck roast and sear on both sides for 3-5 minutes. Remove and add to a sheet tray.
  • Add butter to dutch oven, once melted go in with your prepped vegetables. Allow to saute and soften. De-glaze with red wine and add beef broth. Mix thoroughly, ensuring you get all the fond from the bottom.
  • Add chuck roast to a roaster and pour over vegetables and broth. Add in aromatics (thyme, rosemary and sage).
  • Cover and bake in oven for 3 hours.
  • After time has elapsed, remove 3/4Cups of the braising liquid, add to a small sauce pan on medium heat. Add in flour and mix until thickens.
