- 2.5 Lbs Yukon Gold Potatoes
- 2 Cups Evaporated Milk
- 3/4 Cups Heavy Cream
- 4 Tbsp Butter
- 4 Tbsp Flour
- 1/2 Yellow Onion Diced
- 7 Cloves Garlic Minced
- 8 Oz Smoked Applewood Gouda Cheese
- 16 Oz Mild Cheddar Cheese
- Chives Garnish
- Chopped Bacon/Bacon Bits Garnish
- 1.5 Tbsp All Purpose Seasoning
- 1 Tbsp Nature's Seasoning

Preheat oven to 400°F.
Boil potatoes in salted water for 5–8 minutes. Drain and set aside.
In a saucepan, melt butter over medium heat. Whisk in flour to form a roux.
Add diced onion and garlic. Cook until fragrant.
Stir in evaporated milk and heavy cream. Simmer on low until thickened. Season to taste.
Mix in half of the shredded cheese. Stir until smooth.
In a greased cast iron or baking dish, layer as follows:
Potatoes → light seasoning → cheese sauce → bacon bits
Repeat, then top with remaining shredded cheese
Bake uncovered for 45 minutes or until golden and bubbly.
Garnish with chives or more bacon. Serve hot and enjoy!
