Ingredients
  

  • 2.5 Lbs Yukon Gold Potatoes
  • 2 Cups Evaporated Milk
  • 3/4 Cups Heavy Cream
  • 4 Tbsp Butter
  • 4 Tbsp Flour
  • 1/2 Yellow Onion Diced
  • 7 Cloves Garlic Minced
  • 8 Oz Smoked Applewood Gouda Cheese
  • 16 Oz Mild Cheddar Cheese
  • Chives Garnish
  • Chopped Bacon/Bacon Bits Garnish
  • 1.5 Tbsp All Purpose Seasoning
  • 1 Tbsp Nature's Seasoning

Instructions
 

  • Preheat oven to 400°F.
  • Boil potatoes in salted water for 5–8 minutes. Drain and set aside.
  • In a saucepan, melt butter over medium heat. Whisk in flour to form a roux.
  • Add diced onion and garlic. Cook until fragrant.
  • Stir in evaporated milk and heavy cream. Simmer on low until thickened. Season to taste.
  • Mix in half of the shredded cheese. Stir until smooth.
  • In a greased cast iron or baking dish, layer as follows:
  • Potatoes → light seasoning → cheese sauce → bacon bits
  • Repeat, then top with remaining shredded cheese
  • Bake uncovered for 45 minutes or until golden and bubbly.
  • Garnish with chives or more bacon. Serve hot and enjoy!
